Stories of Oil

From 29 BC to your table

Ancient Piantone di Falerone olive groves give life to a quality monovariety oil full of history, tracing back to 29 BC, when the imposing Roman city of Falerio Picenus stood on the very land where the Municipality of Falerone lies today.

This land is the custodian of ancient Roman history, home to the Falerio Picenus Archaeological Park, located just metres from the olive trees that produce Ventinove a.C. oil. Olive oil production in the Fermo area since the 1500s is documented by the discovery of Torcularia and Dolii in numerous rural villas throughout the territory.

Considered since ancient times as liquid gold, olive oil was once enjoyed only by the wealthy. Not until after 1900 — largely through the sharecropping system — could the farmers who made it finally savour what their own hands had produced.

The method

From field to bottle in 12 hours

The oil is green with golden highlights, medium fruity nose with notes of artichoke and almond. Initially sweet on the palate with a peppery finish. High polyphenol content. Harvested exclusively by hand, and milled within 12 hours, cold-pressed in the finest tradition, to preserve its natural, wholesome character.

The oil is cotton-filtered to remove all impurities from milling, and stored under nitrogen to preserve its qualities over time. Regular chemical analysis guarantees quality: acidity below 0.2%, rich in polyphenols and antioxidants.

Ideal with vegetable soups, boiled legumes, grilled meats and all types of fish. Store in a cool, dark place away from direct light, at around 15°C.
